Ingredients
- 4 Yellow Squash, sliced
- 10-12 Small Carrots, chopped
- 1 medium onion, diced
- 1 TB sugar
- 2 TB ghee, melted
- Salt and black pepper to taste Directions
- wash, peel, and chop carrots
- wash and slice yellow squash (discard tips)
- preheat oven to 375 F
- add some carrots, squash, and onions and repeat layers until finished; mix well
- add salt and pepper; mix well
- add sugar and mix well
- transfer to roasting pan
- drizzle melted ghee
- bake for 40-60 minutes or until vegetables are cooked as desired
