This is a great side item to a meal or mid day snack by itself.
Ingredients
– 1 medium to large head bok choy
– 1/2 small cabbage, chopped
– 2 pegs garlic, chopped
– 2 roma tomatoes, chopped
– 1/2 medium onion, chopped
– 1/2 medium red pepper, chopped
– Cononut Oil
– Favorite Caribbean seasonings, to taste:
— Salt
— Garlic pepper
— onion powder
— JCS Reggae Country Style Special Blend
— Goya Adobo
— Crushed Red Pepper
Directions
– wash bok choy with fruit brush
– separate bok choy leaves from stalk
– chop leaves and stalk
– remove stem and chop cabbage
– chop remaining items
– add desired or light amount of seasonings to leaves, stalk, and cabbage (see video)
– massage seasonings into vegetables; set aside (see video)
– heat pot over medium to high heat
– add oil
– once oil is heated, add garlic and sauté
– add onions and sauté
– add bok choy stalk and sauté
– cover pot and allow to cook over high heat for 5-7 minutes over high heat
– add cabbage and sauté
– allow to cook over high heat for 5-7 minutes over high heat
– add red pepper, tomatoes, and leaves; sauté for 30-60 seconds over high heat
– reduce heat to low-medium temp and cover pot; allow to simmer for 10-15 minutes or until leaves are fully cooked
– Remove from heat and serve hot
Note:
– if you don’t like spicy food, only add crushed red pepper to one bowl; if you like spicy, sprinkle it over all of the bowls (stalks, leaves, and cabbage).
