Ingredients
– added 1/4 tsp cinnamon
– added dash, nutmeg
– used 1 cup traditional oats (see directions below)
– used 3/4 cup unsweetened shredded coconut
– used coconut extract instead of almond extract (did not have any almond extract)
– used 1/3 cup pecan chips
Directions
1. In medium bowl, mix sugar and set aside (see video)
2. Oats
– 1/2 cup traditional oats, ground in a food processor until powder/flour texture
– 1/2 cup traditional oats, ground with mortar or hand just to break some of pieces
– in small bowl, mix oats and set aside
3. Add cinnamon and nutmeg to creamed sugar and mix well before adding wet ingredients
4. Lightly whisk egg, milk, and extracts (wet ingredients) before adding to creamed sugar
